Horray for lazy Saturdays! The best days to cook things that cook themselves. On todays brunch/lunch/whenever it finishes menu, southwestern fritatta, with fried potatoes and a fresh green salad.
Start out with some fresh peppers (the more colors the better!),
onions (cut in large pieces) and skin and slice your potatoes.
Saute with your favorite seasonings (we prefer lemon herb, season all, and some chili powder) and extra virgin olive oil.
Now, since we have a large group to feed (about 12 people) we used about 3 dozen eggs (enough to cover the veggies in the two saucepans).
Pour the eggs into the saucepan and drizzle a little olive oil on top. Add some cheeses (we used a package of extra sharp cheddar, mexican, and feta). Cook a little below medium heat (4 on a scale of 1 to 10). Stick in the oven on 350 degrees, until the surface is golden brown (or a little over :]) or the eggs are firm.
For the potatoes, sauté the potatoes and onions in a skillet or a wok until the potatoes are firm but chewy. Season with salt, pepper and a few cloves of garlic.
